The End of the Summer
It has been a little while since my last newsletter. It is not that I did not have anything to say. For those of you who know me well, I always have something to say. It is probably just the end of the summer doldrums.
I am not happy about the end of the summer. While getting back to a normal routine is healthy, the freedom and generally predictable nice weather of the summer is tough to let go of. Especially when I know that we have 7 months to go before we get nice warm weather again.
The end of summer also marks back to school time. One upside is the free time for parents to get to all the to-do list items that were put off for a later date.
Such as:
1) Cleaning out the garage
2) Scheduling your yearly health and wellness physical
3) Cleaning out your closets
5) Getting your car serviced and ready for the fall and winter
6) Scheduling your health and wellness testing
I think you get the hint.....
It's Flu Shot time again!!!
On another note, I have been asked about when flu shots will be available. Regardless of what you may hear when you call your pharmacy, flu shots, if needed, are best given starting in October. The past history of flu shots, being that they take a few weeks to take effect, and last between 3-6 months, makes getting your shot earlier than October a gamble. Also, there is rarely a flu outbreak that occurs prior to December, while some outbreaks have occurred as late as March. So if you do the math, September may be a wee bit early. Personally, I get a flu shot around Thanksgiving time, but I will have them available at the office starting Friday October 1st, 2010.
Flushots are fully covered by Medicare.
Flushots, while supplies last, are included as part of a Traditional Wellness Plan.
For everyone else, Flushots will be available for $30.
There are other ways to prevent the flu. My favorite is to supplement with Vitamin D. We have a Vitamin D supplement available at the office that has been shown to increase your blood level, thus increasing your chances of not contracting the flu. If you are unsure of your Vitamin D level, testing is also available at our office.
Dr H's End of Summer Strawberry Salsa
I received a lot of comments about my Guac recipe. So to see if I can continue a good trend, It is now time for my salsa recipe. The ingredient list is very low in processed carbohydrates, making it an excellent addition to your low carbohydrate diet.
Ingredient List
3 tomatoes- I used a combination of Big Boys and Rosa tomatoes
1/2 of a small white onion
1 small jalapeno pepper
2-4 small cloves of garlic- dependent upon your taste
2 small strawberries
olive oil - about 1 tablespoon
cilantro - fresh if you have it
sea-salt to taste
white, black and red pepper to taste
O.K.
Here we go!!!!

First, get a clean cutting board, a serrated spoon such as a grapefruit spoon, and a few good knives.
Below is a picture of your ingredients.

Next step is dice the onion, garlic, strawberry and jalapeno. If you do not like hot and spicy, first remove tne seeds and the inner white lining of the jalapeno.
Cut the tomatoes in half, and remove the inner core with all the seeds with your serrated spoon, leaving the outer meaty part of the tomatoes.

Dice the tomatoes

Mix all the above together into a bowl

Add the oil and all other spices and mix thoroughly.

Now for the fun part.
Eating it !!!
But what can a low-carber eat with salsa?
Tortilla chips???
Nope!
On top of toast, like Bruschetta?
Nope again!!
My favorite is salsa over an omelette or baked fish, such as salmon or tilapia!
