IMW LowCarb Gluten Free-Ketoish Pizza


2 eggs

2 cups whole milk

1 cup grated cheese – packed tightly

2 cups almond meal (flour)

1 cup tapioca starch (this is where most of the carbs/starch comes from)

2/3 cup of olive oil  ( I use Italian herb and Garlic Olive oil combo)

2 teaspoons salt

The recipe gets difficult from here- {{sarcasm}}

Take all the ingredients and put them into a blender and blend to mix well.

Then pour the batter into an oiled or buttered deep dish pizza pan.

Pour just enough batter to coat the bottom of the entire pan or to a thickness you want. This recipe works best with a crust that is slightly thinner than a normal pizza.

There may be extra batter left. If so you can pour it into small muffin tins to make the original cheese bread or a smaller bake sheet for another pizza.

Put the pan with batter into a preheated oven at 400 degrees for about 10 minutes or until the dough looks like it has set and is firm. I usually check the bottom of the crust to check its consistency and color. I want it somewhat firm and lightly brown.

When the crust is done, I take it out and let it sit for about 5-10 minutes.

Then I top with tomato/pizza sauce and mozzarella cheese.

Back into the oven until all the cheese melts to your liking.

You can add any toppings you want prior to returning it to the oven.

I like plain normal cheese pizza.

When out of the oven, use a pizza cutter to cut into desired amount of slices. I use the traditional 8 slices.

Absolutely delicious!!

The crust is not what you expect from traditional sickly-ill-wheat-flour, but it is still very good. Throw on your favorite toppings and it will be even better.

Now for the nutritional numbers in one slice:

356 calories

27 grams of fat – 68% fat calories

11 grams of protein – 13% protein calories

17 grams of carbohydrate – 19% carbohydrate calories

This pizza is Keto-ish by proportions for those on a ketogenic diet, but not-so if you eat too many slices. If you are on a 20gram carbohydrate per meal diet, one slice would be all you could eat.
