DrH’s Perfect Baked Potato

Preheat oven to 400 degrees.

Use Idaho or Russets potatoes. I am not sure if they are the same potato, but use the big ones with the ugly brown skins. Wash and rinse them under cold water, then take a paring knife, and make believe you are a voodoo doctor, and poke them like crazy all over. No offense to any voodoo docs out there!!

Then wrap the spuds in aluminum foil. Put into the preheated oven set at 400 degrees for one hour, then let them remain in the oven for another hour while the oven is slowly cooling. The potatoes will continue to cook but much slower. When finished, after about another hour, the baked potatoes come out so soft and creamy, it is absolutely amazing. I use some butter on top, and I eat the skins as they contain many of the good nutrients and fiber from the tater. To thoroughly enjoy these spuds, you do have to remember to give yourself up to two hours to do these potatoes right!!
