This recipe is from Mindy, famous chef of Mindy’s cherry Hill Pizza Palace.
If you are lower carbohydrate eater, and you really miss pizza like I do, perhaps try the Cauliflower pizza crust and enjoy a pizza-like meeal.
Yes it is not exactly like pizza, but it’s fairly close ; )
Cauliflower Pizza Crust
1 head cauliflower, stalk removed
1/2 cup shredded mozzarella
1/4 cup grated Parmesan
1/2 teaspoon dried oregano
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
2 eggs, lightly beaten
Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
Break the cauliflower into florets and pulse in a Vitamix until fine. Cook in microwave for 10 minutes. Let cool.
Squeeze out as much excess water as possible.
In a bowl, combine the cauliflower with the mozzarella, Parmesan, oregano, salt, garlic powder and eggs.
Put baking sheet and spread into 2 circles, resembling 2 pizza crusts. Bake for 20 to 30 minutes. You may want to flip the crust halfway through to attempt to make it crispier.
Add desired toppings and bake an additional 10 minutes.
