End of Summer
Strawberry Salsa
I
received a lot of
comments about my Guac
recipe. So to see if I
can continue a good
trend, It is now time
for my
salsa recipe. The
ingredient list is very
low in processed
carbohydrates, making it
an excellent addition to
your
low carbohydrate diet.
Ingredient List
3 tomatoes- I used a
combination of Big
Boys and Rosa
tomatoes
1/2 of a small white
onion
1 small
jalapeno pepper
2-4 small cloves of
garlic- dependent
upon your taste
2 small strawberries
olive oil - about 1
tablespoon
cilantro - fresh if
you have it
sea-salt to taste
white, black and red
pepper to taste
O.K.
Here we
go!!!!

First,
get a clean cutting
board, a serrated spoon
such as a grapefruit
spoon, and a few good
knives.
Below is
a picture of your
ingredients.

Next
step is dice the onion,
garlic, strawberry and
jalapeno. If you do not
like hot and spicy,
first remove tne seeds
and the inner white
lining of the jalapeno.
Cut the
tomatoes in half, and
remove the inner core
with all the seeds with
your serrated spoon,
leaving the outer meaty
part of the tomatoes.

Dice the
tomatoes

Mix all
the above together into
a bowl

Add the
oil and all other spices
and mix thoroughly.

Now for
the fun part.
Eating
it !!!
But what
can a low-carber eat
with salsa?
Tortilla
chips???
Nope!
On top of toast,
like
Bruschetta?
Nope again!!
My
favorite is salsa over
an omelette or baked
fish, such as salmon or
tilapia!
